Crown Roast of Pork
Allow 2 ribs per person. Cover ends of bones with foil. Salt and pepper the meat. Place in a preheated 450 degree oven, reduce heat to 350 degrees and roast 35 to 40 minutes a pound.

Roast the pork in a Reynolds oven bag (large size) as per the instructions along with potatoes, carrots, onion, and sometimes celery, all of which I cut up. After roasting the prescribed time (also using a meat thermometer), I remove the veggies, sit the meat on a cutting board, make gravy from the juices (by adding flour, water, and Gravy Master). Then I slice the meat with an electric knife (which makes cutting off the string easy) and serve. Often I feature mint jelly for the meat, as well. It makes a great meal and also great leftovers, since there are only 3 in our family.
And it's really not that much work!

Grilled Pork Tenderloin
Mix garlic, olive oil, soy sauce & orange juice in small bowl. Place pork tenderloins on hot grill and baste with sauce. Cook 12-14 minutes on coals 300-400 degrees. Serve with grilled veggies (Microwave vegetables until tender, toss in remaining sauce and finish on grill).

Roast Pork
1 tablespoon dried herbs & 1 tablespoon of olive oil
3 pounds of boneless pork rubbed with salt & pepper
Put the oven rack in the center of the oven and preheat the oven to 450 degrees.
Mix olive oil & herbs, rub it over the roast. Place roast on a rack in a roasting pan, fat side up, and put the roast in the 450 degree preheated oven. Roast for 10 minutes, then RE-SET THE OVEN TEMPERATURE TO 250 DEGREES. Continue cooking for about 50-80 minutes or until the meat registers 150 degrees on a meat thermometer. Cover meat with foil and let rest for about 15 minutes before slicing.

Pork Tenderloins with Dried Fruit
Heat olive oil in large skillet; brown
tenderloins over medium heat for 5-6 minutes or until pork is slightly pink in center and meat thermometer reads 160 degrees Remove pork from skillet and place on covered platter.
Add 1/2 cup apple juice and 1 tbsp dijion mustard to skillet; cook and stir over medium high heat until sauce thickens and bubbles. Add sliced, dried fruit cherries, apricots, raisins); cook and stir for 2 minutes longer. Return pork to skillet for 1 minute; then serve. 4 servings
E-Z Pulled Pork Sandwiches
Rub pork butt with dry rub, then sear on grill 20-25 minutes. Put in a disposable aluminum baking pan and cover with your favorite sauce, and bake in a 325 degree oven for 1 1/2 - 2 hours, or until meat thermometer reads 165 degrees. Let cool, then pull apart with forks. Serve on white bread, with our Homestyle Coleslaw, and Kosher Barrel Pickles.
Roast Pork Loin with Applesauce
Season roast with salt and pepper. In large skillet, brown roast on all sides in vegetable oil. Place on rack in a shallow roasting pan. Mix applesauce with mustard, honey, rosemary & sage and spread over roast. Bake, uncovered, at 350 degrees for 1-3/4 to 2-1/2 hours or until a meat thermometer reads 160 degrees. Let stand for 10 minutes before slicing.
Serve with applesauce and green beans.
Breaded Pork Chops
Preheat oven to 375 degrees. In small bowl mix 1 cup crushed crackers (or bread crumbs), garlic powder, salt&pepper. In another small bowl beat 3 eggs. Dip chops in egg batter and then in breading. Put pork chops in casserole or baking dish. Dots chops with pats butter. Cover with tin foil and bake for 45 minutes. Serve with applesauce or spiced apple rings, mashed potatoes and French cut green beans.
Pork Tenderloins Italiano
Combine 1 cup of Italian Dressing,
1 tsp Worcestershire Sauce and 1 lb. of Pork Tenderloins in a heavy duty sealable plastic bag. Let marinate for 30 minutes (or longer if you have the time). Preheat skillet to medium high. Cook tenderloins approx. 7 minutes on both sides, depending on the thickness. Do not overcook.
Serve with Italian Cut Green Beans and Baby New Potatoes tossed with butter and rosemary.
